Ready, Set, Bake! Bake Off-inspired recipes and products

The Great British Bake Off final is upon us and with all the delicious baked goods that have been filling our screens for the past nine weeks, our cake cravings are at an all-time high. If like us, you’re feeling inspired, get into the baking spirit with these tasty recipes courtesy of our friends over at Absolute Taste, and see our pick of the kitchenware that’ll get you off to a floury start…

The Classic - Victoria Sponge Cake

from The Terrace by Absolute Taste

Ingredients:

For the sponge:
350g Unsalted butter
350g Caster sugar
6 Eggs
350g Self-raising flour
1tsp Baking powder
1tsp Vanilla essence

For the filling:
300ml Fresh whipping cream
400g British strawberries
200g Strawberry jam

For the decoration:
10g Icing sugar for dusting

Method:

For the sponge:
Preheat the oven to 150c.
Cream the butter, vanilla and sugar until light and fluffy and then stir in the eggs a little at a time.
Fold in the flour and baking powder.
Line the bottom of two 23cm cake tins with a disc of baking paper and grease the sides of the tin with butter.
Divide the mixture between the 2 tins and bake in the oven for 25mins until golden and the cake springs back when gently pressed.
Turn both cakes out onto a rack and leave to cool.

For the filling:
Whip the cream until light and fluffy and stiff peaks form.
Slice the strawberries (keep a handful whole for the decoration).

To serve:
Take one cake, and once cooled, spread the strawberry jam on the cake and top with the whipped cream. Then top with a layer of the fresh strawberries.
Place the other cake on top for your sandwich.
Use the remaining strawberries to decorate the top of the cake and then lightly dust with icing sugar.

 

The Decadent - Coffee and Walnut Cake

Ingredients:

For the sponge:
325g Unsalted butter
325g Caster sugar
6 Eggs
325g Self-raising flour
1tsp Baking powder
1tbsp Boiling water
2tbsp Instant coffee granules
50g Chopped walnuts

For the coffee icing:
250g Unsalted butter
250g Icing sugar
1tbsp Boiling water
1tbsp Instant coffee granules

For the decoration:
50g Chopped walnuts
10g Icing sugar for dusting

Method:

For the sponge:
Preheat the oven to 180c.
Cream the butter, vanilla and sugar until light and fluffy and then stir in the eggs a little at a time.
Dissolve the coffee granules in the boiling water and add to the mixture.
Fold in the flour, baking powder and chopped walnuts.
Line the bottom of two 23cm cake tins with a disc of baking paper and grease the sides of the tin with butter.
Divide the mixture between the 2 tins and bake in the oven for 25-30mins or until a skewer inserted into the cake comes out clean and the cake is golden brown.
Turn both cakes out onto a rack and leave to cool.

For the butter icing:
Beat the butter, icing sugar and vanilla extract until light and fluffy, dissolve the coffee granules in the boiling water and add to the icing.

To serve:
Take one cake, once cooled, and spread on half of the butter icing.
Place the other cake on top and use the rest of the icing to top the cake.
Sprinkle with chopped walnuts and use a sieve to dust the top of the cake with icing sugar.
